Chocolate Cake

The Base

We started with a triple chocolate brownie mix and followed the recipe on the box, with a few minor adjustments (per YouTube cooking gods):

  • Replaced the oil with butter.
  • Added two extra eggs.

Once cooled, the brownie was sliced horizontally into two layers. The operation proved challenging because the brownie had achieved approximately the same structural integrity as reinforced concrete.

To soften it, Irina prepared a syrup of water, sugar, and rum. The brownie remained stubbornly firm, but at least it smelled magnificent.

White Ganache
325 g Ghirardelli white chocolate
100 g organic heavy cream
A hint of vanilla

Dark Ganache
Very dark Ghirardelli chocolate
Heavy cream in the same 3:1 chocolate-to-cream ratio

For reasons still under investigation, the dark ganache yielded roughly twice the volume of the white ganache.

Assembly

Brownie layer → white ganache → brownie layer → dark ganache → an unapologetically large quantity of homemade whipped cream on top.
