Breakfast Strata

INGREDIENTS

I adapted and changed it and based of what I had in my kitchen:

  • 4 tablespoons neutral oil (?), divided
  • 5 thin Costco cabanos-like smoked beef sausages
  • 1 big, whole sweet yellow onion
  • 2-4 garlic cloves
  • 4-5 ounces baby spinach
  • 6 large eggs
  • 1 1/2 cups heavy cream
  • 4 tablespoons unsalted butter, softened and divided
  • 6-7 medium potatoes, shredded
  • 12 ounces shredded swiss cheese
  • a handful of sliced greens from green onions, divided
  • salt and pepper to taste

 INSTRUCTIONS  

I used my super chopper/shredder/slicer. It drastically reduced the prep time. I tried to finely slice the sausage in the slicer and all I got was a pile of shredded meat. It was better like this, actually. Cheese and potatoes – shredded, onion and garlic, chopped.

Place a large skillet over medium heat. Add oil and sausage, about 3 to 4 minutes, or until looks kind of done. Transfer sausage to bowl and set aside.

Add remaining oil to skillet and sauté onion and garlic for 2 to 3 minutes or until looks kind of done. Season with salt and pepper.

Add spinach and continue to sauté until spinach wilts, 2 minutes or until looks kind of done.

Pour onion mixture into bowl with sausage and set aside.

Put the shredded potatoes and cook them a bit – it seems that I did it OK, even if it was the first time cooking them like this.

Grease 9″x13″ baking dish (or whatever fits in the Ninja) with 2 tablespoons butter.

In a liquid measuring cup whisk together eggs and cream until completely combined. Generously season with salt and pepper.

Add the potatoes into the bottom of the baking dish in an even layer. Top with the sausage, spinach and onion mixture. Pour the egg and cream mixture over strata and add the shredded cheese (I have some mixture left – no idea what to do with it – probably an omelette).

Top dish with half green onions.

Preheat oven to 375˚F. Bake covered strata in oven for 30 minutes. Uncover, dot top with remaining 2 tablespoons butter, and continue to bake for an additional 15 to 20 minutes or until the top has browned and slightly crisped at the edges and the center has just set.

Cool strata for 10 to 15 minutes, top with remaining green onion and serve.

CONCLUSION

Everybody had a blast – and they weren’t just hungry. It was that good.
